Recipe: Tom Bullock’s “Dream” Cocktail

Tom Bullock, from St. Louis, MO, was not the first African-American bartender, but was the first to write a cocktail book — The Ideal Bartender. Famous for his pre-Prohibition drinks, until said constitutional ban essentially ended his career. This cocktail is one of many, and one of his most famous. With cream and an egg white, it is surprisingly refreshing!

 

Ingredients:

  • 2 oz. gin

  • 2 oz. cream

  • 1 egg white

  • 1/4 oz. lemon juice

  • 1/4 oz. rich simple syrup (2:1 sugar to water) — I used Demerara simple syrup

  • 1/4 oz. Creme de Menthe

  • Mint leaf for garnish (optional)


Instructions:

  1. Add all ingredients (MINUS the Creme de Menthe) in a shaker and dry-shake (no ice).

  2. Add ice. Shake for 10 seconds.

  3. Strain into a Collins glass over ice.

  4. Top with the Creme de Menthe, gently stir in.

  5. Top with a mint leaf.
