Amaro on its own is delicious, and a spirit I like to start the night out with. But the Amaro sour can take on a range of combinations, but here I keep it simple-ish with a couple special adds.

Ingredients:

  • 1.5 oz. Amaro (Averna is a popular choice here)

  • .5 oz. Plantation Dark Rum (any dark rum is fine, just not spiced!)

  • .75 oz. fresh lime juice

  • .75 oz. simple syrup

  • 4 dashes Angostura bitters

  • 1 egg white (optional)

  • Mint leaf (optional)

Instructions:

  1. Place all ingredients in a shaker…at first with NO ice. This is called a dry shake. Gets it all frothy. Shake.

  2. Add ice. Shake for 10 seconds.

  3. Strain into a couple glass, add in one cube (optional)

  4. Top with a mint leaf.
