Recipe: Strawberry Daiquiri

Love a strawberry daiquiri, but maybe you don’t want it that sweet? Add a few drops of cardamom bitters.
Ingredients:
2 oz. white rum (preferably Plantation brand)
.75 oz. lime juice
.75 oz. strawberry simple syrup (see below for recipe)
4 dashes, cardamom bitters
Instructions:
Place all ingredients in a shaker with ice and shake to combine.
Strain into a coupe glass (medium square ice cube in the glass is optional)
Strawberry Simple Syrup
Take 16 oz. of strawberries — wash, hull and slice into halves. Put in pot, cover with water and bring to boil. Once at a boil, reduce heat and simmer for 10 minutes, skimming any foam that builds on top. When the strawberries have lost a lot of their color, turn off the hest and remove strawberries from liquid. Discard. Whatever amount of liquid you have (put in measuring cup), place equal amounts of sugar (i.e. 1 cup for 1 cup) along with the strawberry liquid back in the pot. Bring to a boil, let boil for 2-3 minutes, remove from heat. Let cool before use.
