Recipe: Blistered Shishito Peppers w/ Chipotle Dipping Sauce

Super easy. And something that while getting more mainstream, will still impress your guests with something a little different to add to the usual veggie tray.
Ingredients:
12 oz. bag of Shishito Peppers (can find in produce section)
2 Tbsp neutral oil (olive, avocado, vegetable)
Flaky finishing salt (I used Maldon)
1 C Mayonnaise (can use sour cream, vegan mayo, etc.)
2 Tbsp water
2-3 tsp lime juice
1/4 tsp kosher salt
1 tsp chili powder
2 tsp smoked paprika
1/4-1/2 tsp of ground chipotle chili powder OR adobo sauce from a can of chipotle peppers
Instructions:
Wash the peppers and dry them well with a paper towel.
I make the sauce first while those are drying.
In a small bowl, mix all ingredients from mayo on down the list. Set aside.
Heat oil in a cast iron skillet over medium heat.
Place peppers in the skillet. Turning frequently over 10 minutes to get them coated in oil and blistered.
Remove them and put in dish that is able to be covered.
Serve immediately with dipping sauce.
